Degumming is the process of removing colloidal substances in oil. It mainly removes phospholipids and trace metals combined with phospholipids, calcium, magnesium, iron, and other impurities. Its effect has an impact on deacidification, bleaching, deodorization and dewaxing.

Hydration degumming is the use of hydrophilic groups contained in lipid molecules such as phospholipids to add a certain amount of hot water or acid to the oil to make the colloidal water-soluble lipids swell and condense. It is then separated from the oil by sedimentation or centrifugation.

Phospholipids are roughly divided into hydratable phospholipids(HP) and Nonhydratable Phospholipids, (NHP). Nonhydratable Phospholipids (NHP) and trace metals such as calcium, magnesium and iron are one of the problems that the oil industry is deeply troubled by. Early frost damage to soybeans, continuous rain during harvest, and heat generation of soybeans during storage and transportation, increase the content of nonhydratable phospholipids in crude oil. This not only increases the refining loss, but also the phospholipids from this type of crude oil are of extremely poor quality, and the oil is darker in color.

Studies have confirmed that NHP is composed of phosphatidylcholine (Phosphatidy Choline, PC) and phospholipid ethanolamine (Phosphatidy ethanomine, PE) by phospholipase to generate phosphatidic acid (PA) as its main components. The total amount of divalent metals in soybean oil NHP is roughly the same as the total amount of phospholipids. In acid degumming, according to the principle of acid adjustment and grading degumming, First, add acid and other chemical reagents to convert nonhydratable phospholipids (NHP) into hydrated phospholipids (HP), and convert the divalent metal ions Ca++, Mg++, Fe++, such as calcium, magnesium, and iron combined with PA and PE, into a free state. Move to the water phase to remove. Then adjust the PH value (usually around 5) by adding dilute alkali to improve the separation conditions and reduce the oil loss in the oil degumming refining process.
