1. Low temperature and avoid light
Under high temperature, the chemical reaction and oxidation reaction of oils and fats are accelerated, and they are easily rancid. Under the action of ultraviolet rays, ozone compounds will also be formed, resulting in bad odors. Therefore, edible oil should be kept away from stoves and sunlight when not in use, and should not be placed in colorless and transparent glass bottles, and should be placed in a cool place. If possible, put it in the refrigerator in summer as much as possible, such as sesame oil.
 
2. Hypoxic storage
The more concentrated the oxygen, the larger the contact surface, and the longer the contact time, the more it will accelerate the oxidation of oil and cause rancidity. Therefore, close the lid of the oil drum in time after each use of oil.
 
3. Replace the container.
Don't mix old and new oils, replace them with new containers. Long-term use of a certain oil container should be cleaned regularly, drained of water before use, because the mixing of water will also accelerate the oil hydrolysis and oxidative rancidity.
